SNAIL CAVIAR

The Snail Caviar or Snail Eggs are called Caviar d’escargot (and even White Caviar) in France, its commercial name is “Perles de France”.

They come from the Gros-Gris species (Helix Aspersa Maxima).

It is a unique sensation which blooms under your palate and has an unforgettable taste redolent of an adventure in the heart of an oak forest.  It possesses a subtle flavour with aromas of mushroom, heather and bark. 

With good-sized grains and a fine whitish skin, they’ll surprise even the most demanding palates. They are delicious on their own, as part of sophisticated recipes, or even on toast. 

 

How does it work?

Based in the Charente-Maritime region, the escargots of the Gros Gris species (Helix Aspersa Maxima) are certified by the IRQUA (Institut Régional de la Qualité Agroalimentaire). They are bred in the open air, in a natural setting of over 10 acres, in direct contact with soil soaked in Cognac. This gives the “Perles de France” their unique taste, tender and perfumed. 

Selected indiviudally, the breeders are sorted and carefully placed in a humidified and heated greenhouse at 15 degrees which recreates the ideal spring conditions. Snails lay their pearls on heather soil. The pearls are treated like precious gold, as they are sorted, selected and harvested.  Then the natural recipe (which has been kept a secret) is prepared with the Perles de France and Fleur de Sel (brine). This is done in a laboratory complying with EU regulations. In order to ensure a subtle and rare taste, the Perles de France are inserted and pasteurized with the utmost care into real caviar boxes. This thorough and meticulous approach all takes place to offer individuals and trades people alike, or simply put, those connoisseurs of rare products, the original and unforgettable taste of the BELLORR Perle de France.

The delicate salting with Fleur de Sel enables the full expression of the incomparable woody aromas. A complete mastery of refinement, extremely rigorous controls and vigorous selection criteria ensure the quality of the Bellorr Perles de France.
